Hiking in Israel: the Best Desert Hiking in the World 
The Negav and Dead Sea make-up about two thirds of the land in Israel and present some of the best desert hiking and backpacking in the world. Access to these areas is limited to two primary roads running north-south from Eilat to Tel Aviv and Jerusalem. While the Dead Sea is visited by the majority of tourists, the Negav is often overlooked (this can be attributed to few tourists, maybe a total of 30, I encountered during my time in the Negav).
Hiking in Israel: The Desert
There are several different routes you can hike from Har Tzfahot. The shortest of these is more or less circular and easily accessible by bus. But if you choose one of the longer routes you can enjoy more of Eilat's incredible, multi-colored mountains.

Israel National Trail 
The “Israel Trail,” an 800-kilometre-long hiking trail that starts at Dan, in the north of the country, and ends in Eilat. The trail actually has two branches – one going through Samaria and the other along the coastal plain. Both branches pass through Jerusalem on their way from Dan to Eilat. Hikers along the Israel Trail can attempt it in one fell swoop (something which has not yet been done), or in segments.
Recollections of a Summer in Israel 
The first two weeks spent in Israel were in the Negev. The desert was much more beautiful than I could have expected. The desert was mountainous and had a unique character that I learned to appreciate. I did a lot of hiking in the Negev, including a four and a half-day hike from the desert into Ber-Sheba.
